
Southern fried chicken

I love southern fried chicken, but I hate that its always so unhealthy is you get it from restaurants and take-aways. This is a really basic recipe for southern fried chicken which can be done as strips, nuggets or larger portions. Feel free to adapt this recipe to your own tastes and enjoy.

Chop up the chicken into the desired size (i go for about 3cm chunks). Or if doing chicken thighs or drum sticks, leave whole, they will require a longer cooking time depending on size.

Put all the chicken in a bowl and cover with the buttermilk. cover the bowl and place in the fridge to marinade for at least 1 hour.

Mean while mix all the flour, paprika, breadcrumbs and salt and pepper together and place in a flat dish. This will be used to coat the chicken before frying.

After the chicken has marinaded take a large saucepan and place on a high heat with about 5 cm of oil in the bottom to heat. remove the chicken peices from the buttermilk and roll in the flour mimx until well coated.

Once the oil is hot carefully add the chicken to the pan (don't overcrowd it) and cover with the lid. Cook for about 3 minutes before turning and cooking for another 3 minutes. The chicken pieces should be golden brown and cooked through before serving.

Place the cooked chicken on some kitchen roll to soak up the oil before serving. et voila, enjoy! I usually serve this with chips and salad.
