Cooking Instructions
- 1
In a bowl, mix together the butter at room temperature and sugar, add the eggs and vanilla. Mix everything together.
- 2
Add the flour, baking powder and salt along with mashed bananas and milk until it comes together.
- 3
In a saucepan, to make the caramel layer, add the butter and raw or brown sugar, bring to a simmer and cook until your sugar has melted. Remove from the heat and stir in the vanilla.
- 4
Preheat your oven to 350 degrees. Pour the sauce in the bottom of a 9" cake pan, arrange the slices of bananas over it.
- 5
Pour the batter over the banana and caramel layer, and bake for about 40 minutes (it might take a little more or less time depending on your oven) or until fully cooked through.
- 6
Allow it to cool for about 10 minutes, then invert it carefully on a platter.
- 7
Allow it to cool for another 30 minutes, then slice and serve! If you slice it too soon without cooling it first, it might fall apart easily.

Pear Upside Down Cake Pear Upside Down Cake
When I had first eaten a pineapple upside down cake, I started thinking about a pear upside down cake. I head it couldn’t work because the pear released so much liquid. Years later, I saw something on PBS, they made one from scratch with the addition of corn starch to absorb some of the liquid released by the pears. This is my first attempt at a pear upside down cake and I did it similar to the way I’the make the pineapple version. Don’t shame me for using the boxed cake mix 😏. The cake was actually very balanced and not overly sweet. It wouldn’t be a bad idea to top it with a warm apricot jam or something similar. Karl -

My uncle was the first one I saw make this cake when I was about 18 years old. It was really magical. No, not because of all the partying that was going on. I was just amazed at how good it looked. If you don’t want to go through the hassle of making your own cake, a Yellow Cake Mix will do the job along with some pineapple rings. Karl -
