An easy and quick meal for everyone!

14 ounces ground beef

Finely chop the onion for our ground beef

Finely chop the fresh mint and add it to our ground beef

Finely chop the parsley and add it to our ground beef

Add salt and pepper and mix all our ingredients well until combined

Add a little oil all around and mix well

We added to our ground beef mint, parsley, salt, pepper, tomato juice, finely chopped onion, and of course a little oil all around

2 🍆 eggplants cut in half for stuffing

Cut the eggplants lengthwise and sprinkle with salt until they release their liquids, then drain well and pat dry with paper towels

Then on a baking sheet with parchment paper, brush the 🍆 eggplants with olive oil to bake at 390°F for 3-4 minutes, then remove and scoop out the flesh to make room for our ground beef filling

Then remove the seeds from inside

Brush the 🍆 eggplants well with oil

Fill with ground beef and then top with grated kefalotyri cheese

Sprinkle the grated kefalotyri cheese on top of our ground beef

Place the 🍅 tomato slices on top of the grated kefalotyri cheese

Bake in the oven at 390°F for 40 minutes and we are ready to serve our dish
