Ingredients

140 minutes
  1. 7-8chicken drumsticks
  2. 7-8large cilantro roots
  3. 5 clovessmall Thai garlic
  4. 1 tablespoonwhole black peppercorns
  5. 1 tablespoonvegetable oil for sautéing
  6. 150 gramspalm sugar
  7. 100 gramsbrown sugar
  8. 3-4 stickscinnamon
  9. 5-6 slicesfresh ginger
  10. 5 piecestoasted star anise
  11. 2 tablespoonssalt
  12. 15 tablespoonslight soy sauce
  13. 3 tablespoonssweet dark soy sauce
  14. water

    Method: Wash the chicken drumsticks thoroughly and set aside. Pound the garlic, cilantro roots, and peppercorns until fine.

    Try making it yourself! I guarantee it's aromatic and delicious. I like to add fresh ginger, which makes the broth even more fragrant. ^____^

    Heat a pan and add oil. Sauté the pounded cilantro roots, garlic, and peppercorns, then add the ginger slices and stir until fragrant. Add the chicken drumsticks and stir until well combined. Cook for a while until the chicken is cooked through.

    Add enough water to cover the chicken drumsticks and make the broth. Add cinnamon sticks and toasted star anise, then add salt, light soy sauce, palm sugar, brown sugar, and sweet dark soy sauce. Bring to a boil over high heat for about 20 minutes.

    Once boiling, add bitter melon and cover. Continue to braise over high heat for another 15 minutes. Then reduce to medium heat and braise for another hour. You'll have a fragrant broth and tender chicken drumsticks.
