Chop the garlic and onion finely. Pour a few tbsp of olive oil into a saucepan and add the onion and garlic with the pinch of saffron and a teaspoonful of dried oregano (if you can get fresh oregano use a couple of tbsp instead). Gently sautee until the onion starts to go transparent.

Chop the squid into rings and throw in the saucepan with the onion and herb mixture along with the fresh prawns. Add the sliced shiitake mushrooms. Sautee until the prawns go white and pink.

Pour in the passata and add a tablespoon or two of tomato puree. Stir and add a few tbsp of water, taste and add salt and pepper. I usually use about a tsp of each. Gently simmer for about 5 mins.

Serve over fresh cooked linguini or any other pasta of your choice with parmesan flakes and lemon or lime wedges.
