Peel and slice ridge gourd (Turai) into thin slices vertically

Mix half cup besan, chilli powder, half spoon salt, pinch of turmeric, masala Dhania powder and pinch of soda(optional)

Heat one table spoon of oil and quarter spoon each of Ajwain and jeera, mix with besan, add sufficient water and mix it to Bajji batter consistancy

Dip the ridge gourd peices in batter and deep fry in hot oil on medium heat.

Serve hot. Very tasty snack crispy outside and soft inside
