sate in Indonesian spelling, is a Southeast Asian dish of seasoned, skewered and grilled meat, served with a sauce. It is a dish from Indonesia; and popular in Malaysia, Singapore, and Thailand.
Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats, or tofu; the more authentic version uses skewers from the midrib of the coconut palm frond, although bamboo skewers are often used. These are grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings. Satay can be served in various sauces, however most often they are served in a combination of soy and peanut sauce. Hence, peanut sauce is often called satay sauce.

Ingredients

  • 500 grambeef loin/Pork loin/ Chicken cut into pieces 2cm
  • 2 tablespoonslime juice
  • 3 tablespoonssweet soy sauce
  • 1 tablespoonsoil
  • Spices (ground)
  • 1 tablespoonscoriander, roasted
  • 1/4 teaspoonscumin, roasted
  • 1 teaspoonpeppercorns
  • 4 clovesgarlic
  • 3red chilies

Steps

  1. 1

    Mix and knead beef or lamb or pork with ground spices, lime juice, sweet soy sauce and oil. Let the mixture stand at least 15 minutes.

    Thread 4-5 pieces meet onto a skewer, brush it with remaining marinade and grill until golden brown.

    Serve with sweet soy sauce or peanut sauce, or both.

  4. 4

    For the Sweet soy sauce :
    Grind 10 (optional) bird's eye chilli with 3 shallots and combine with 3 tablespoons sweet soy sauce.

  5. 5

    For the Peanut butter sauce :
    Grind 2 red chilli with 100 gram roasted or fried peanuts. Add 100 cc watter and stir well.
