Bring 3 to 5 quarts of water (about 3 to 5 liters) to a boil in a large pot.

Add the cinnamon sticks, tomatoes (cut into quarters), onion (cut into quarters), peppercorns, clove, and piloncillo.

Boil until the mixture thickens to a syrup-like consistency.

Meanwhile, melt the lard and fry the bread slices until golden brown. Set aside.

Spread some lard on the bread slices and arrange them in a baking dish to form a base layer.

Strain the solids from the syrup using a colander.

Dip the fried bread slices one by one into the strained syrup so they absorb the liquid, then arrange them in the baking dish. Repeat until all the bread is used.

Top with a layer of Cotija cheese, raisins, and roasted peanuts.

Bake at 400°F (200°C) for about 45 minutes.
