Ingredients

  1. 1/3 cupbutter (about 150 grams)
  2. 1/4 cupfine granulated sugar (about 50 grams)
  3. 1/3 cuppalm sugar (about 75 grams)
  4. 3eggs
  5. 1 1/2 cupsall-purpose flour (about 175 grams)
  6. 1 tablespoonbaking powder
  7. 1 teaspoonbaking soda
  8. 1 teaspoonspice mix
  9. 1 1/2 cupsgrated imported carrots (about 200 grams, use a cheese grater)
  10. 1 cupraisins (about 150 grams)

    Prepare the ingredients.

    Preheat the oven to 350°F. Beat all ingredients except carrots and raisins until smooth, light, and fluffy.

    Add the carrots and raisins alternately, mixing well.

    To make the cream cheese icing: Beat 1/4 cup butter (about 60 grams) with 5 1/3 ounces cream cheese (about 150 grams) until smooth. Gradually add 2 1/2 cups powdered sugar (about 300 grams) while beating until smooth. Add 2 tablespoons grated orange zest. Ready to use!
