Add the corn flour and all-purpose flour to a large bowl and mix for 2 minutes.

In a small bowl, combine the baking soda and baking powder with 1/2 cup water.

Pour 1 liter (4 1/4 cups) of warm water into the large bowl and mix for 3 minutes.

Add the baking soda and baking powder mixture to the large bowl. Mix for 5 minutes until a dough forms.

Heat canola oil in a skillet. Fry the gorditas until they turn a deep golden brown, about 3 minutes.
