Baby Bok Choy with Shiitake Mushroom Oyster Sauce (Vegetarian)

Wash the baby bok choy thoroughly. Soak the dried shiitake mushrooms in water for 20 minutes until they soften.

Bring a pot of water to a boil. Blanch the baby bok choy briefly, then transfer immediately to a bowl of ice water to keep it crisp and bright green.

To make the sauce: Sauté minced garlic in oil until golden. Add the shiitake mushrooms and stir-fry until fragrant, then remove the mushrooms. Add 2 tablespoons oyster sauce (vegetarian), 1 tablespoon soy sauce, 1 teaspoon sugar, a pinch of MSG (optional), a little chili, and 1 teaspoon cornstarch. Cook until the sauce thickens and comes to a boil.

Arrange the baby bok choy on a plate. Pour the sauce and shiitake mushrooms over the top and serve. Yummy!
