My sons love breaded chicken so I often experiment with different flavours - ginger, cumin, basil.... Today I tried with lime. I added the zest of one lime, but next time will double the amount to stress the added flavour.

My sons love breaded chicken so I often experiment with different flavours - ginger, cumin, basil.... Today I tried with lime. I added the zest of one lime, but next time will double the amount to stress the added flavour.

Zap your stale bread in the food processor and beat the eggs

Grate the zest of 2 limes and add to the beaten eggs
- 3
Heat the oil - moderate heat. If the heat is too high, the second batch of fillets will burn
- 4
Soak the fillets in the egg (having added pepper and salt)
- 5
Coat in the bread crumbs (use left hand to transfer eggy fillets to the crumb dish, and right hand to coat)

Fry in the hot oil

When the side up meat starts to turn white around the edges turn over
- 8
Line a surface with kitchen towel and when the fillets are ready, take out of the pan and put on the surface to drain off any surplus oil

Enjoy with a squeeze of lemon juice and a green salad.
