In a large bowl, add all dry ingredients and mix well. Make a well in the centre.

Put warm water and 4 tablespoons of ghee in the well. Mix with clean hands adding water to make a dough.

Knead the dough well to a smooth and soft dough for soft chapati. It's important to take time kneading.

Cover with cling paper leave to rest for 20mins.

Divide dough into two balls and roll each ball on a flat floured surface into a large rectangular shape. Apply ghee on it and start rolling from the longest edge to the other long edge. Cut it into small log like shape (chapati size ball) pinch both ends to seal in the ghee. This saves time.

Roll a ball on a flat surface to a circle shape and place on a pan on medium heat turn when one side is cooked to cook the other side appling ghee on the already cooked side and turning the gheed side to cook some more. Repeat with all the other balls.
