Matumbo fry
Easy finger licking recipe.
Steps

Wash the matumbo under running water.

Cut the matumbo into small pieces.

Put the matumbo into a clean sufuria, add three cups of water and boil until tender. Ensure all the water is used up.

Start frying using the fat in the matumbo. If not enough according to your taste add some cooking oil.

When the matumbo turns brown, add chopped onion and cook for some time. Then add tomato, dhania and salt.

Add a little water to cook the ingredients. This should not leave soup in the matumbo. After cooking for about ten minutes, it is ready to serve with either ugali or rice.
