Ingredients

  1. 6 lbsground chicken or turkey
  2. 2 cansblack beans
  3. 2 cansrotel
  4. 2 packsGoya Mexican rice
  5. 24tortilla burrito
  6. 1 cuptaco seasoning
  7. 32 ounceMexican cheese
  8. 60 ounceEnchiladas sauce

Cooking Instructions

  1. 1

    Brown ground chicken and drain fat.

  2. 2

    Add taco seasoning and water. Let simmer 20 min.

  3. 3

    Cook rice. Follow rice directions. When cooked add to meat mixture.

    Add black beans and rotel to meat. Heat to boiling

  5. 5

    Fill tortilla with meat mixture and roll. Place on greased pan

  6. 6

    When pan is full pour enchiladas sauce over enchiladas and then cover with cheese.

    Bake 20 min to let cheese melt and heat everything up.

  8. 8

    Serve with chips and salsa
