Dahi vada
A very sweet, spicy, sour and tangy flavoured dahi vadas.
Steps

Soak Urad dal overnight. Make sweet curd by adding sugar. Next day keep the curd in the fridge.

Grind the dal, ginger and green chillies to fine paste. Add salt and hing.

Take the batter make balls and fry them in batches. Then soak them in water. After some time press the excess water and keep the vadas aside.

To make chutney, grind coriander leaves, green chillies, salt.

Now in serving dish, take 4-5 vadas, over it spread the sweet curd, then sprinkle red chilli powder, roasted jeera powder, salt, chat masala, and green coriander chutney. Serve.

Please note :- curd is already sour and sugar added makes the curd sweet too. So I get a combination of sweet and sour.
