Boil carrots until tender around 5-7 minutes

Drain water from the pasta, add in a blender and puree until smooth. Measure half cup of the carrot puree. Add the eggs in the blender too and puree until mixture is well combined

Pour mixture into bowl, add flour, salt and knead until soft dough forms. Cover and let rest for 30 minutes

Divide dough into 4 pieces. Roll out one of the pieces into a rectangular shape. Roll as thinly as you can. Fold the dough into half, then over each other, until it forms a layered flat dough

Cut into 1/4 inch strips. Use fingers to fluff the pasta so that the strands do not stick to each other. Cook as desired
