Karahi is a deep circular cooking pot, tomatoes based chicken stew cooked in karahi, with special spices and coal smoke it becomes koyla karahi

Dry roast black pepper corns, cloves, bay leaf and black cardamom seeds; cool and grind them into fine powder; set aside.

Heat oil in a pot, add chicken pieces and fry till it changes colour; take out from loil and set aside.

In the same oil add sliced onions and fry till it's light golden brown, add ginger garlic paste; saute to remove raw smell, add slices tomatoes and cook till tomatoes dissolve completely, add yogurt and fry masala for few minutes; add chicken pieces, red chilli powder, cumin powder, coriander powder, salt, roasted and ground pieces; mix 2tbsp of ginger julienne, 2-3 green chillies, mix and cook covered till chicken is tender and oil comes up to the surface.

Add dry fenugreek leaves, cook for 1-2 minutes.

Finally give coal smoke, garnish with ginger julienne, fresh coriander leaves and green chillies.

Serve with naan.
