Ingredients

  1. 1 kgChicken
  2. 2 tbspGinger Garlic paste
  3. 2Onions medium (sliced)
  4. 4-5Tomatoes (sliced)
  5. 1/4 cupYogurt
  6. 1 tspRed chilli pwder
  7. to tasteSalt
  8. 1 tspCumin powder
  9. 1 tspCoriander powder
  10. 6-8Black pepper corns
  11. 2Black cardamoms
  12. 3Cloves
  13. 1Bay leaf
  14. 1 tbspDry fenugreek leaves
  15. 4-5 tbspFresh coriander leaves (chopped)
  16. 1 cupOil
  17. 4 tbspGinger julienne
  18. 4 tbspFresh coriander leaves
  19. 4-6Green chillies
  20. Piececoal for smoke

Steps

  1. 1

    Dry roast black pepper corns, cloves, bay leaf and black cardamom seeds; cool and grind them into fine powder; set aside.

    Heat oil in a pot, add chicken pieces and fry till it changes colour; take out from loil and set aside.

  3. 3

    In the same oil add sliced onions and fry till it's light golden brown, add ginger garlic paste; saute to remove raw smell, add slices tomatoes and cook till tomatoes dissolve completely, add yogurt and fry masala for few minutes; add chicken pieces, red chilli powder, cumin powder, coriander powder, salt, roasted and ground pieces; mix 2tbsp of ginger julienne, 2-3 green chillies, mix and cook covered till chicken is tender and oil comes up to the surface.

    Add dry fenugreek leaves, cook for 1-2 minutes.

    Finally give coal smoke, garnish with ginger julienne, fresh coriander leaves and green chillies.

    Serve with naan.
