Ingredients

  1. 2 1/2 lbsground beef
  2. 1small onion, minced
  3. 1 tbsminced garlic
  4. 2taco seasoning packets
  5. 2eggs
  6. 1 cupplain bread crumbs
  7. For the filling
  8. 1small can refried beans
  9. 8 ozcream cheese
  10. 1red jalapeño, minced
  11. 1 cupshredded monterrey jack cheese
  12. 1 cupshredded cheddar cheese
  13. 1 cupshredded mozzarella cheese
  14. Tapatillo sauce and lime wedges for garnish

Steps

    Mix all of the meat ingredients in a lg mixing bowl and set aside for 20 minutes.

    Let cream cheese get to room temperature. Mix all filling ingredients except refried beans in another bowl.

  3. 3

    Grease a 11x15 baking dish. Use 1/3 of the meat mixture and spread flat on the bottom of the baking dish.

  4. 4

    Evenly spread beans over this meat. You won't use the whole can. Spread all of the filling ingredients over beans.

  5. 5

    With the remaining meat, make large patties with your hands. Arrange over the top of the meat. Seal up the edges or all of the filling will cook out.

  6. 6

    Bake on center rack at 375 for 40 minutes. Switch oven over to high broil. Cook 10 more minutes. Remove from oven. Immediately take any filling that has cooked out and spread over the top. When loaf has cooled a little, transfer to a broiling rack. Let grease drain off. Slice and serve. Garnish with lime slices and tapatillo sauce. Enjoy.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.

Because it is the melted cheese that runs out of the center. For if you use super lean beef it usually doesn't stay in. If you use fattier beef it has a better chance of sealing and you won't need to do that.
