Tried this for supper though without onion but it's just awesome
Steps

Cut the tomatoes in a separate plate and crush ginger and capsicum together using a mortar and pestle

Wash rice in a container then measure the amount of water (2cups) in a sufuria then put the rice in water after boiling for sometime to boil the rice and allow it to boil till all water is finished

Put a little cooking oil in a pan then put the crushed ginger and capsicum in the pan and allow it to cook for sometime before adding tomatoes allow them to cook till ready

To the boiled rice,add the mixture of capsicum,tomatoes and ginger and mix.Lastly garnish this with coriander in it.

Serve this with milk tea
