Ingredients

  1. Gulab Jamun Ingredients :
  2. 1 cupMilk powder
  3. 1 largeEgg
  4. 1 tbspAll purpose flour
  5. 1 tbspMelted butter
  6. For sugar syrup :
  7. 1 tspBaking powder
  8. 2 ¼ cupWater
  9. ½ tspCardamom powder
  10. 1 tbspLemon juice
  11. Ingredients :
  12. 1 ½ cup Sugar
  13. Andhra Recipe Pappu Chekkallu ( Rice Crackers ) Ingredients :
  14. 500 gramsRice flour
  15. 150 grams butter
  16. 250 mlwater
  17. 1 1/2 teaspoon salt
  18. 1 teaspoon red chilli powder
  19. 1 teaspoonfinely chopped ginger
  20. 1 teaspoongreen chilli paste
  21. 1/4 cuproasted peanuts

Steps

    Gulab jamun Preparation
    Combine all the dry ingredients and mix well.To this add the butter and egg and make a soft dough.Make small balls out of the dough.Heat oil in a deep pan and fry these balls in medium hot oil (the oil should not be too hot. If u add the balls in too hot oil, it will be browned quickly and you will get it uncooked inside). Make sure that these balls are fried evenly by turning the sides on and on. Add the fried balls to the prepared sugar syrup and cook on low flam

    Make the syrup and keep it ready on low flame before preparing the gulab Jamun dough. Add the fried jamuns immediately to the hot sugar syrup and cook for 5 minutes.

    Soaking :
    soak green gram and split bengal gram in water for 1-2 hours.later rinse them,strain out the water and keep aside.
    Mixing the Rice Flour :
    take a wide mixing bowl.add rice flour,salt,red chilli powder,chopped ginger,green chilli paste,roasted peanuts,soaked green gram,soaked split bengal gram and mix well.add butter and mix again.pour warm water and mix the flour.do not pour excess water,try to mix the flour with very less water.

    Frying Chekkalu (Rice crackers preparation)
    heat enough oil for deep frying.divide the flour into equal portions and make them into balls.take a plastic sheet and grease it with oil.take each ball and pat it into flat round shape with your fingers.make 4-5 at a time and drop them into oil carefully.fry them on both sides equally until they turn into nice golden colour.repeat the process.
