Ingredients

Serves 1-4 servings
  1. For the plantain patties
  2. 6ripe plantains, cooked with skin on
  3. 1 cupflour (about 120 grams)
  4. 1 cupoil (about 240 ml)
  5. 1egg
  6. as neededBreadcrumbs,
  7. For the filling for the patties
  8. Refried beans or cream cheese
  9. For the cold salad
  10. Elbow macaroni or any pasta you have at home
  11. 3potatoes, cooked and diced
  12. 5carrots, cooked and chopped
  13. 5 tablespoonsmayonnaise
  14. 5 tablespoonssour cream
  15. 2 canstuna
  16. Salt, to taste
  17. Mandarin water
  18. 7mandarins
  19. Sugar, to taste

Steps

  1. 1

    Cook the plantains with the skin on until they split. Drain, remove the skins, and mash the plantains. Mix with the egg and breadcrumbs, then set aside.

  2. 2

    In another pot with water, add the carrots and salt. Cook for a few minutes, then remove the carrots and add the potatoes to the same water. Cook the pasta for a few more minutes, then drain.

  3. 3

    In a large bowl, combine the pasta, tuna, carrots, potatoes, mayonnaise, and sour cream. Mix gently so you don't mash the ingredients.

  4. 4

    For the patties, with clean hands, take a ball of the plantain mixture and shape it into a patty. Add the filling, close it, coat with flour, and fry in hot oil. Drain on paper towels, then serve.

  5. 5

    For the mandarin water, squeeze the mandarins well, remove the seeds, sweeten with sugar to taste, and serve.
