Gurasa (Sudanese Flatbread Pancakes)
This is a popular Sudanese dish enjoyed with various stews, or as a sweet treat with tea by adding honey or sprinkling sugar on top. Sift the flour. This helps prevent lumps, mixes the flour well, makes it smooth, and allows air in, which helps the batter rise when cooked in the pan later.

Add the salt, yeast, baking powder, and black pepper (optional; I added it because I was making a savory version).

Add the warm water and mix with a hand whisk until all ingredients are well combined. The batter should have a consistency similar to cake or pancake batter. Let it rest and rise for 30–40 minutes.

After the batter has risen, stir it with a hand whisk to release the air. Grease a nonstick skillet or pan with oil. Keep a small bowl of oil nearby and brush the pan with oil before cooking each one.

Once the pan is greased and heated, use a ladle or deep spoon to pour some batter into the pan. Use the back of the spoon to gently spread the batter in a circular motion to form a medium-sized circle.

When small bubbles appear on the surface, gently shake the pan; the pancake will move easily. Flip it to cook the other side. Each one cooks quickly and only needs a few seconds per side.

Check the thickness of the pancake. Serve with a variety of stews, such as okra stew (see my other recipes) or molokhia (jute leaf stew), which is prepared in a similar way. There are many dishes you can enjoy it with.

You can also serve it with tea by sprinkling sugar between the layers or drizzling with honey (it tastes delicious this way).
