Ingredients

Healthy Ladoo
  • 1 cupdeseeded, chopped dates
  • 1/2 cupcashews, almonds & pistachios, coarsely powdered
  • 2 tspghee
  • 1/4 tspdry ginger (saunth) powder
  • 2–3 tbsp chocolate sauce
  • 2 tbspdry coconut, grated

    Remove the seeds from the dates and chop them into small pieces. Lightly roast the cashews, almonds, and pistachios, then pulse them in a food processor until coarsely crushed. Do not make a fine powder.

    Heat ghee in a non-stick pan and sauté the chopped dates on low heat. Once the dates become soft and start to melt, add the coarsely crushed nuts and mix everything well.

    Cook until the mixture comes together and reaches a consistency that is easy to shape into balls. Add the dry ginger powder and chocolate sauce. Mix well and remove from the heat

    Let the mixture cool slightly. Once it is comfortable to handle, shape it into small balls. Roll each ball in grated dry coconut until evenly coated.

Tips

1) Do not roast the dates on high heat; cook them gently on low heat so they soften without burning.
2) Keep the nuts coarsely crushed for a nice crunchy texture.
3) If the mixture feels too sticky while shaping, let it cool a little more before rolling.
4) You can also coat them with desiccated coconut, chopped nuts, or cocoa powder instead of dry coconut.
