Mashed matoke, beef and greens
I love my bananas mashed
Steps
- 1
Peel your bananas and wash in salty water (reduces the blackish colouration)
- 2
Boil them in water until well cooked. Remove excess water if any and mash them until smooth.
- 3
Add salt to taste and the margarine. Add your chopped dhania (optional) at this stage.
- 4
Stir until well Incorporated. Set aside.
- 5
For the beef, cut into cubes (preferred size) and boil in water for about 15-20 mins.
- 6
On a different pan, fry your onions in oil until slightly brown. Add the chopped tomatoes, green pepper 1e Lui and the Courgette (and any other vegetables of your choice)
- 7
Once cooked, add the boiled meat, salt and any other seasoning. Let it fry until well cooked. You can add a little water to wet it.
- 8
For the greens, I had spinach mixed with kales. Clean and cut them.
- 9
In a pan, heat oil and onions. Sauté the onions and add the greens. Stir as you fry and add salt to taste.
- 10
Once done with the cooking, plate and enjoy your meal.
