Remove the phyllo dough from the refrigerator. Chop or crush the mixed nuts, add 1 1/2 tablespoons sugar, and mix well before starting.

Melt the clarified butter and vegetable butter together, then pour them into one cup. Grease a baking pan with some of the butter mixture.

Take one sheet of phyllo dough and lay it out on your work surface. Keep the remaining sheets covered while you work so they don't dry out.

Brush the sheet gently with the butter mixture, being careful not to tear it. Place a second sheet on top, brush with more butter, and repeat until you have 4 to 5 layers. (Note: It's okay if the sheets aren't perfectly flat and have some folds in the middle.)

After layering, place the nut filling along one edge of the buttered sheets.

Gently fold the edge of the sheets over the nut filling, brush the edge with more butter to seal, and roll up tightly and carefully.

After rolling, trim the ends. Don't discard the trimmed pieces; once they dry, crumble and mix them with the filling.

Use a ruler or toothpick to measure and cut the baklava rolls into even pieces, as shown in the photos.

This is how the inside should look. Arrange the baklava pieces neatly in the greased baking pan.

Repeat the process with the remaining phyllo sheets and filling until all are used. Arrange all pieces in the pan, brush the tops with the butter mixture, and bake at 350°F (180°C) until golden brown.

Once out of the oven, pour the simple syrup over the baklava. Let it sit in the pan for just one minute, then transfer to a serving plate. Serve immediately or chill in the refrigerator and serve cold.

Note: The syrup should be at room temperature for best results.

The baklava will be light, crispy, and not too sweet. Garnish with more nuts or pistachios if desired. Enjoy!
