Amaranth spinach, from the same family of quinoa, but unlike quinoa, is a vegetable that commonly found in Singapore, tropical Asian countries, as common as Asians eating rice. The recipe was created based on healthy vegetarian diet, which can be added to mushrooms and dried shrimps in hokkien tradition. By eating it, you can feel the bitter of amaranth spinach, the sweetness of the pumpkin, the scent of the rice onion, and by mixing, you can feel the combination taste of all three.

Ingredients

  • 1 bowlsmall cubes pumpkin
  • 1large onion sliced
  • 1and half pressure cooker measuring cups of Thai fragrant rice
  • Cold pressed olive oil, himalayan pink salt and white pepper powder
  • 220 gramsbunch amaranth sharp or round spinach washed
  • 2pressure cooker measuring cups of tap water

    Induction cooker choose stir-fry mode and set at 100°C. Fry slices of onion in the fry pan with olive oil until fragrant.

    Then put a bowl of cubes pumpkin in the fry pan and fry with onion, add half a tea spoon of pink salt and half a tea spoon of pepper, fry until cubes of pumpkin turn dry.

    Wash and rinse one and half cups of Thai fragrant rice. Put the rinsed one and half cups of Thai fragrant rice with two cups of water into electric pressure cooker pot.

    Transfer stirring fry pumpkin onion from the fry pan and lay on top of the uncooked rice in the electric pressure cook pot, do not mix. Close and switch on the electric pressure cooker and cook for 28 minutes under cook rice for fine cooking selection.

    Prepare 220 grams of amaranth spinach, remove the roots and break into small pieces. ln order to let body easily to absorb other nutrients, put amaranth spinach in the boiling the water for 2 minutes to make it soft, then drain the water out. Transfer the cooked amaranth spinach to a porcelain bowl, cut it into small pieces with a pair of scissors.

    Transfer amaranth spinach from porcelain bowl to the pressure cooker pot and mix with cooked pumpkin and rice, add in olive oil and mix well. Transfer it to a plate and ready to serve.
