Pork fillet medallions

Steps

Prepare your meat, rub it with olive oil and smashed garlic, salt and pepper. Start preheating your over to gas mark 8. This step can be performed a day earlier so the meat marinates (in fridge).

Heat frying pan to higher temperature and sear the meat (as shown in pics). This helps the juices to stay inside the meat. Make sure you sear every side.

Transfer the meat to the baking tray and bake for 10 minutes, then turn the meat upside down, add rosemary, cover with aluminum foil and bake for another 20 minutes.

While the meat is in the oven, dice the vegetables and fry them in the same pan as you did the meat previously. Take the meat out of the oven, make sure to let it rest for 2-3 minutes before you cut it into medallions. Enjoy!
