Mezzi Rigatoni Cacio e Pepe

In a bowl, add enough Pecorino Romano cheese to cover the bottom and grind in black pepper to taste.

Once the water comes to a boil in a pot, add the mezzi rigatoni.

Just before draining the pasta, add some of the pasta cooking water to the bowl with the Pecorino and pepper to create a creamy sauce.

Drain the pasta while it's still al dente and add it to the bowl.

Mix everything together, plate, and serve.
