Sprinkle maida on cut potatoes and deep fry in hot oil till golden crisp. Remove on absorbent paper. Sprinkle salt and pepper on it.

For salsa, Heat oil in a pan. Add onions and garlic saute for one minute.Add capsicum, let it cook. Then add tomatoes, chilli flakes, salt and tomato ketchup. Cook for a minute with stirring occasionally.

For serving, keep fries at the bottom. Pour salsa.. Grate cheese when it's still hot.. Sprinkle chilli flakes and oregano.. And serve
