Ingredients

  1. 2 quartsfresh strawberries, tops removed, sliced
  2. 1 teaspoonfresh lemon juice
  3. 1 (8 teaspoon)salt
  4. 1 teaspoonfresh lemon juice
  5. 1 (8 teaspoon)salt
  6. 1 3 oz box strawberry jello
  7. 2 cups cold heavy whipping cream
  8. 1 st teaspoon vanilla extract
  9. 1/4 cups confectioners sugar
  10. For Garnish
  11. Fresh whipped cream and grated chocolate

Steps

  1. 1

    Purée strawberries, lemon and salt in a food processor. Strain through a fine mesh strainer.

    Heat one cup straw juice to a boil. Add jello and stir to dissolve completely. Add 1 cup cold strawberry juice and refrigerate until cold bit Not setting up_

    Beat cream until starting to thucken. Add vanilla and sugar. Beat to just hold its shape

    Fold un cold strawberry mixture m spoon into glassed and refrigerate at least 6 hours or overnight

    Garnish with whipped cream and chocolate shavings

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
