I combined a few recipes together and came up with this rich yummy soup. I now favor this soup over potato soup . Its low carb and I lowered the sodium but not so low in fat I feel. Please feel free to make changes to your liking. I just love it the way it is rich and hearty and full of flavor.😊

I love cauliflower soup....broccoli can be substituted...I freeze all my soups for extra meals or give a jar to a friend/family in need of great soup!

Roasting the vegetables first brings a deeper flavor to this soup. And the recipe is easily adjustable to suit your own taste; more of this, less of that, different toppings. This is a favorite of mine. Made a big pot to vacuum seal single-serving bags to stock my freezer. Comes in handy since my roommates (sis and BIL) are kinda picky eaters. Easy for me to grab a bag of soup for dinner when they're wanting hot dogs.

You can even use a different cheese (e.g., pepper jack).You can also purée the soup once it cools down, or not. If you prefer a bit thicker texture and don’t mind small chunks of vegetables, skip step 7.Lastly, it’s fine to use frozen vegetables, like broccoli and cauliflower. It still tastes great!
