Preheat oven to 180;℃ and prepare 2 size 6 tins or 1 size 10 tin. Mix sugar and butter, whisk until fluffy

Add eggs one at a time.

Add the lemon rind and essence and mix well.

Fold in the sieved flour and baking powder.

Bake for 30-35 minutes.

Let the cake cool completely before frosting.

Slice the cake into two parts, apply blueberry jam bwn the cakes and finish on top with a thin layer of buttercream
