Add maida, salt, oil or ghee and black pepper, ajwain and jeera powder to a bowl. Mix all of them.

Pour 1/4 cup water and being to mix

Sprinkle water as needed and make a stuff tight dough. It must be stuff and not soft or too moist. It must not be too dry or crumbly as well.

Keep is covered all time until the last is rolled.

Divide it to small balls.

Smoothen all the balls by rolling them lightly in between your plams. Avoid needed them. Keep them covered in the bowl.

Flatten the ball. Being to roll it evenly from centre to a round puri.

Being to heat the oil on a medium high flame and continue to make rest of the pooris.

Drop the poori carefully to the hot oil. Fry on the other side as well until golden and crisp.

Remove the poori to a kitchen tissue.

Ready for serve. And store to a 10 to 15 days.
