Pour the measured flour in a basin

Measure the dry ingredients

Add the dry ingredients in the flour and mix

Measure the coconut

Mix the dry coconut in water

Add the coconut milk in the flour little by little to make dough

When the dough is ready set it aside for 30mins to rise

When the dough has doubled in size dived into equal parts

Using a rolling pin flatten each part it should be a bit thick

You can heat the oil at this point

Cut the flattened dough to your desired shape

Deep fry in hot oil and let all sides brown well

Set the mitai aside to cool

Prepare the sugar syrup by heating in a pan the sugar and water bring them to boil

Add the mitai in the syrup and keep tossing until the sugar starts to dry up

Mitai are ready enjoy with a cup of tea
