Methi Pulao

Soak rice for atleast 10 mins and set aside. Pluck the fenugreek leaves (methi) from the stem and soak them for a while in water for the mud to settle down. Drain them completely.

For gravy, heat a pan with oil, add onions and fry till they turn translucent. Then add green chillies, ginger paste, fenugreek leaves, coriander leaves and fry till the raw smell disappears. Add salt to taste and stir. Turn off the flame and keep it aside to cool down. Once it is cooled grind it in the mixer grinder to obtain smooth paste. Can add water if required.

Now take a pressure cooker and place it on the flame. Heat the oil and add the spices and fry till they begin to sizzle. Then add onions and fry till the turn translucent. Next add capsicum, peas, fenugreek leaves and fry till you get the aroma. Then add the gravy prepared earlier and stir.

Add the soaked rice, water and salt to taste. Mix well, cover the lid and cook it on a high flame for 3 to 4 whistles. Then let the pressure drop on it's own since the rice is cooking when the cooker is hot and pressure is there inside it. Then gently fluff the rice before serving.
