Steps

  1. 1

In a large pot mix together beef, pork, onions, celery, parsley, water and all spices and herbs. Cook on medium heat. Bring to a boil and cook until meat is broken down into crumbs (15-20 minutes)

  2. 2

Let mixture simmer on low for 50-60 minutes. Keep checking to avoid over cooking. Do. It let it dry out.

  3. 3

Boil 2-3 potatoes per meat pie. Check how much liquid is left in the meat before adding potatoes. If need be remove some of the liquid. You do t want liquid at the bottom of your pie. Once cooked add potatoes to meat mixture and mash.

  4. 4

Let cool. Place half the mixture in one pie shell, and place a shell top on. Flute the edges and cut slits on the top to let the steam escape.

  5. 5

Bake in the bottom third of the oven at 400 degrees for 35-45 minutes, or until golden brown.

  6. 6

Let pie stand for 5-10 minutes before serving.

  7. 7

To freeze... double wrap in foil, and then place In a ziplock bag to avoid freezer burn.
