Our favorite go to recipe for birthday cakes! If it's not chocolate, it's the moist yellow! You can easily color part of the batter for the marble/swirl effect. Made these for a tea party.

Our favorite go to recipe for birthday cakes! If it's not chocolate, it's the moist yellow! You can easily color part of the batter for the marble/swirl effect. Made these for a tea party.

Heat the oven to 180 degrees. In a large bowl beat margarine or butter with an electric mixer for 30 seconds. You can also do this by hand.

Add sugar and vanilla essence and beat till combined well. Be sure to scrape the sides of the bowl to ensure that everything is incorporated.

Add eggs, one at a time, beating after each. The batter should be smooth now.

In another bowl, combine the flour, baking powder and salt. This is the dry mixture.

Add the dry mixture and the milk alternately to the beaten mixture. Beat till just combined. The batter should be smooth.

I made cupcakes with this recipe. Line the cupcake pan with liners. Use an ice-cream scoop to pour the batter into each cupcake liner. Normally I only fill it about halfway full. (I didn't want to make many batches so I over filled them this time) Bake for 15 minutes. Toothpick inserted in the center should come out clean if they are done. They turned out moist and fluffy! YUM!

If making a cake, grease and flour your pan. Usually bakes at 180 for 30 minutes. Keep checking for doneness after 27 minutes.
