In a pot add the sweet potatoes and cook until tender.remove from heat and allow to cool.remove the skin using a knife and dice into cubes. Set aside.

In a bowl crack the eggs,add diced tomatoes,onions,stock cube and pinch of salt and then whisk.in a medium pan add little oil.once hot pour the whisked eggs and cook for a minute.stir with a spoon or wooden spoon to scramble.repeat the process of stirring after 10 seconds each time until eggs are cooked.

Serve the boiled diced potatoes in a neat plate and pour the scrambled eggs by the side. It is ready to be enjoyed with anything of your choice-juice,tea,or alone.
