as neededshredded coconut,
as neededmascarpone cheese,

Brew the coffee and let it cool.

Scoop some mascarpone cheese with a teaspoon and place it on one amaretti cookie. Top with another amaretti cookie to make a sandwich.

Repeat until you use up all the mascarpone cheese.

Dip each sandwich in the coffee, then roll in the shredded coconut.
