Ingredients

  • 1 lbground beef
  • 1large diced onion
  • 1 cupdiced red, green, and yellow pepper
  • 1/4 cupchopped fresh cilantro
  • 2 cupsdiced zucchini and yellow squash
  • 1 Tbspminced garlic
  • 1 Tbspchili powder
  • 1 tspcumin
  • 1/2 tsppaprika
  • 1/4 tspCayenne powder
  • 1 cangreen chilies
  • 1 canblack beans, rinsed and drained
  • 2 cansrotel (1 Mexican, 1 regular)
  • Corn tortillas
  • Cheese

Steps

  1. 1

    Preheat oven to 350°F. Brown hamburger with onion, over high heat, add peppers, cilantro, zucchini, garlic and spices. Add green chiles and black beans, stirring to mix throughly, add rotel and mix thoroughly.

    Spray or lightly grease a 9 x 12 casserole dish. Lay tortillas on bottom and sides. Sprinkle with cheese. Place half of mixture in casserole dish. Layer with more tortillas, add the remainder of beef mixture and sprinkle with cheese. Bake till cheese melts, and is hot through.

    Serve with sour cream and guacamole.
