Macrobiotic All-Purpose Stewed Daikon Radish Leaves and Dried Shiitake Mushrooms Macrobiotic All-Purpose Stewed Daikon Radish Leaves and Dried Shiitake Mushrooms
While trying to figure out what to do with my daikon radish leaves, I tried out various recipes, but I kept coming back to this one. It's delicious. When rehydrating the shiitake mushrooms, you can speed up the process by breaking them into smaller pieces, then soak them in water. For best results, you should put them in a jar with water the night before so they can be used right away; I recommend this method since they will be tasty... When I'm in a hurry, I just break them up. Recipe by moriam cookpad.japan -

Miso Soup with Mushrooms Miso Soup with Mushrooms
When I used to live in the U.S. and didn't have access to Japanese mushrooms like shimeji and shiitake, I used mushrooms instead in miso soup. It's actually pretty tasty! Since then it's become one of my favorite dishes to make.Place the mushrooms in cold water (don't start boiling them with hot water) and simmer them very gently to extract their umami. If you are in a hurry, add a little dashi stock. Don't add too much miso since it will overwhelm the flavor of the mushrooms. Use plenty of mushrooms for the best result. For 3 servings. I made this as a small side dish to go with chicken. I had some mushrooms that needed using up and some spinach that had been in the freezer for a while. so I came up with this dish. Had a nice balance of flavours I would suggest adjusting the vinegar to how strong you want it to be. Rae -
Easy Marinated Mushrooms Easy Marinated Mushrooms
"Marinated Mushrooms"by Hokuto Kinoko to make a recipe for a savory pound cake (I reduced oil to the minimum, added more flavors, etc.) and this is the modified recipe.1) Don't wash the mushrooms before use (they will lose their flavor). 2) Don't soak the mushrooms in water after blanching (they become watery and don't blend well with oil). 3) Cool slowly so that their flavor seeps into the oil. This dish is more delicious if you leave them at room temperature and cool naturally. Recipe by tearstar cookpad.japan
