First, prepare the syrup: Combine 1 cup water with 2 cups sugar in a saucepan. Bring to a boil, then add a squeeze of lemon juice to prevent crystallization. Once the syrup thickens slightly, remove from heat.

Next, in a blender, combine the liquid ingredients: 3 cups warm water, 1/2 cup milk, and sugar. Blend until the sugar dissolves. Add the dry ingredients: flour, semolina, vanilla extract, baking powder, and yeast. Continue blending until the batter is smooth and free of lumps.

Let the batter rest for at least 30 minutes to rise.

Heat a nonstick skillet over medium heat. Pour the batter in small circles. Cook until the surface dries and bubbles form; they are done when the bottoms are golden. Remove and repeat with the remaining batter. Cover the cooked pancakes with a towel to keep them from drying out.

Once finished, fill the pancakes with cream, top with chopped pistachios, and serve with the syrup. Enjoy!
