Ingredients

  • 3 1/3 lbsmasa harina dough (about 1.5 kg)
  • 4dried guajillo chiles
  • 1/4onion
  • Salt, to taste
  • 1 lbpressed pork cracklings (about 1/2 kg)
  • 2 cupswater (about 480 ml)

Steps

  1. 1

    Remove the stems and seeds from the chiles, rinse them, and boil them with enough water to cover and the onion. Once the chiles are soft, blend everything together with the water, then pour into a pot with a little oil.

    When the sauce comes to a boil, add the pork cracklings in pieces.

    Simmer on low heat until the cracklings break down, stirring with a spoon.

    Take a portion of masa and shape it into a small bowl. Add some pork crackling filling and cover it with more masa.

    Once sealed, shape it into a ball.

    Place it between pieces of plastic from a bag.

    Press with your fingers and palm until you have a thin gordita.

    Place it on a preheated griddle and cook until the edges look done, then flip with a spatula.

    Cook until both sides are fully cooked.
