Ingredients

30 minutes

  • Cooking Oil
  • 1big Onion
  • 3 clovesGarlic pounded
  • 3tomatoes
  • 2big Brinjals
  • 2Courgettes
  • 1grated Carrot
  • Curry powder
  • Oregano
  • Green/Red pepper
  • Salt

Steps

30 minutes
  1. 1

    Wash and slice all your vegetables.

  2. 2

    Switch and preheat the oven. Then oil your baking tray and place your Brinjals and Courgettes to bake for about 8-10mins.

    Remove from the heat and let it cool.

    Fry your onions until translucent then add your garlic and continue stirring.

    Add Tomatoes and continue stirring until they are dry.

    Add the Green Pepper, Carrot spices, salt and stir for one minute then add your baked Brinjals and Courgettes and stir for 2 minutes.

    Serve while it is hot with Rice.

    Remove from the heat and sprinkle with Dhania.

    Enjoy your meal. It is delicious. Vegetables can taste good.
