A slow-cooked recipe made in a regular pot. An amazing dish for a special day with the whole family.

Wash the tripe with water and vinegar, then drain well.

Pour enough olive oil into a pot to cover the bottom by about 1 inch.

Add all the ingredients to the pot. Finely chop the onions and peppers. Then add the spices, mint, parsley, chili peppers, and bay leaves.

Add the spices generously. Let everything cook down, and when it is well reduced and dry, add the white wine.

As the stew needs more liquid, add water as needed. Cook over medium heat for about 2 hours, stirring occasionally to prevent sticking.

Essential: Serve with bread!
