Ingredients: 5-6 medium potatoes wash and cut in chunks. Peeling is optional; I cup Real Mayonnaise; 2 tbs vinegar (optional); 1/2 tsp Salt; 1 tsp Sugar; 1/4 ground blabk pepper; 1 thinly sliced celery; 2 meduim size carrots diced into cubes; 1/2 cup chopped onions (optional); 2 hard boiled eggs

This is my mom's old orginal potatoes salad recipe. Since I got some irish potates from my sister who has a mimi potoes farm and I thought whu recreate my mom's potatoes salad but I made mine creamy and a little spicy.
Super easy, super healthy and sooo good.

2 tbsvinegar (optional)
1/2 tspSalt
1 tspSugar
1/4ground blabk pepper
1thinly sliced celery
2meduim size carrots diced into cubes
1/2 cupchopped onions (optional)

Cut up your pototes into chucks, wash and cover with water, bring to boil over medium heat. Reduce heat to low and simmer until potatoes are tender, drain and cool slighly.

Combine mayonnaise, salt, sugar, vinegar and pepper in a large bowl.

Add potatoes, celery, onions and eggs and toss gently.. Refrigerate and served chilled. This salad is very feeling, so i had mine with just grilled turkey wings

Since my son wanted carrots in his, i added same ingredients with carrots separately for him..Refrigerated it as well and served him.
