Ingredients

  • 1 tbspcoconut oil or olive oil
  • 1onion, diced
  • 2garlic cloves, crushed
  • 1large green chilli, thinly sliced
  • 2 tspcumin
  • 2 tspdried coriander
  • 1 tspcinnamon
  • 2sweet potatoes, diced
  • 200 gChantarey carrots
  • 1 tbspfresh lemon juice
  • 1 tbspmaple syrup
  • 400 gtinned chickpeas
  • 800 gtinned tomatoes
  • 50 gdried apricots

Steps

  1. 1

    In a large saucepan, gently fry the onion and garlic in the oil for 5 minutes.

  2. 2

    Add the cumin, coriander and cumin and stir well to coat the onions. Continue to cook the spices for another 5 minutes.

  3. 3

    Add the sweet potatoes and carrots to the onions and stir to coat the vegetables with spice.

  4. 4

    Add the remaining ingredients to the pot, stir well and then simmer, uncovered for 40 minutes. Check that all of the vegetables are cooked through before serving.
