'Mentsuyu' (Noodle Dipping Sauce)

Here are two methods. The popular method uses ‘Katsuobushi’, the Bonito flakes. ‘Bonito’ is a name for a type of tuna fish. Its fillets are boiled, dried, smoked, then fermented using the assistance of mould. This method makes really good sauce. But you can make it quickly and easily using the Instant Dashi Powder. Don’t underestimate this instant recipe, because it tastes really good, too!

Ingredients

  2. 1/2 cupMirin
  3. 2/3 cupSoy Sauce
  4. 10-15 gor a handful of ‘Katsuobushi’
  5. 2 cupsWater
  6. < Ingredients for Quick & Easy Method >
  7. 2 cupsWater
  8. 1& 1/3 teaspoon Instant Dashi Powder *’Katsuobushi’ type recommended
  9. 1/3 cupMirin
  10. 1/2 cupSoy Sauce

Steps

  1. 1


    Heat Mirin in a saucepan to boil off alcohol. Then add Soy Sauce and bring it to the boil. Add ‘Katsuobushi’ and cook about for a minute.

    Add Water and bring to the boil again, then remove from heat. Drain the sauce well. Allow it cool, then chill in the fridge.

  3. 3


    Place all ingredients in a saucepan and bring to the boil. Keep boiling for a few minutes. Allow it cool, then chill in the fridge.
